Toyota Stadium Executive Chef, Rex Turner was brought in during the middle of the 2017 season, and has had the offseason to plan and implement a brand new line of menu items that will be a hit among the fans.
Chef Turner has opened five restaurants in Dallas. He was a part of the Nick and Sam’s family and has spent the last five years at the Intercontinental Hotel.
Looking at the new menu items, Chef Turner has included a strong mix of items; when asked his vision, he said “We’re in Frisco, and I’m thinking about bringing in a taste of Texas; what the people here want to eat, and what people visiting here would want to eat. Tex-Mex is big here, southern comfort is big in Texas, it’s a blend of everything. The most important thing is cooking something that people would want to eat.”
Turner has been in the restaurant industry for years, and when asked on what drew him to FC Dallas, he said “I just wanted to do something different. I needed a different challenge, and when the opportunity came up with FC Dallas, it was a totally new challenge to create concession stand foods in a little, tiny kitchen. It’s challenging, but very exciting for me, I want to bring restaurant quality food at a concession stand.”
The new menu items will be placed in different stands all over the stadium. Below are a few of the latest items to hit Toyota Stadium.
Green Chile Chicken Nachos
This dish will be starting out in the Winstar Club, but appears to be making its way to concession stands at some point this season. It has tortilla chips, chicken slow cooked with green chiles, onions, jalapeños, sour cream, and pico de gallo. One of the things I have heard quite a bit lately is that we do not see nachos that are stacked up and messy anymore, it is usually individually laid out on plates. This is not the case, it is filled to the brim, loaded with flavor. The chicken is simply outstanding; you don’t really taste much of the spice at first, but it really creeps up on you. The jalapeños and onions compliment the chicken real well. If and when this makes it to the concession stands for the public, this is a must buy.
Texas BBQ Dog
This has a fresh poppyseed bun, brisket, hot dog, and a beer mustard coleslaw. This hot dog brings a southern gourmet twist to your typical stadium food. For me, the coleslaw and the bun makes this meal amazing. This is a must have if you catch multiple games a season.
This bowl has Yukon Gold mashed potatoes, BBQ brisket, BBQ sauce, topped with beer-battered onion rings, chipotle ranch dressing, and green onions. This bowl was not available for taste testing, but it certainly looked delicious.
This has roasted corn, mayonnaise, cotija cheese, hot sauce, lime juice, and cilantro for garnish. If you are looking for elotes that you would find similar to Fuel City, you will not be finding that. You could tell that the ingredients were fresh in this, but honestly was not my favorite rendition of this dish. For me, it was lacking some spice, maybe it needed some more hot sauce, but it ended up not having as much flavor as I would have liked.
Broccoli and Apple Salad

“This salad is perfect for those who do not really like salad.” said Chef Turner. This dish has apples, broccoli, dried cranberries, carrots, almonds, and an apple cider vinaigrette. This is a nice change from the majority of meals you would find at stadiums, it’s light, it’s healthy, and most of all, it’s delicious! This salad is a must have when attending Toyota Stadium.
Buffalo Chicken Bowl
If you want something hearty and full of flavor, this is the dish for you.
The Buffalo Chicken Bowl has mac and cheese, crispy buffalo chicken, jalapeño ranch, shredded cheese, and green onions. I can’t begin to explain how delicious this item was. The mac and cheese is what takes this dish to the next level. If you are wanting spicy, this has just enough spice; you won’t be reaching for water after every bite.
Chef Turner’s favorite? Hummus Platter (not listed) and the Buffalo Chicken Bowl.
My favorite? Buffalo Chicken Bowl and the Texas BBQ Dog.
